Mandatory Certifications

📋 Required Before Working

These certifications are mandatory for all FOH staff and must remain current throughout employment.

RBS Certification (Responsible Beverage Service)

ALL FOH staff must be RBS certified - NO EXCEPTIONS

Critical Requirements:

  • No one without RBS certification may serve alcohol at any time

  • • Certification must be current and valid
  • • Required for all staff who handle alcoholic beverages
  • • This is a legal requirement - violations can shut down the venue
  • • Keep certification card on you during shifts

💡 Pro Tip: Take photo of your RBS card as backup and know your certification number

Food Handlers Card

ALL FOH staff must have current food handlers cards

Essential Information:

  • No one without a food handlers card may use kitchen, ice machines, etc.
  • • Required for all staff who handle food, beverages, or ice
  • • Must be renewed according to state requirements
  • • Health department compliance requirement
  • • Covers proper food handling, temperature control, and sanitation

Certification Management

Your Responsibilities:

  • Track expiration dates - don't let certifications lapse
  • Renew early - start renewal process 30 days before expiration
  • Keep copies - have physical and digital copies available
  • Update management - provide new certificates immediately after renewal
  • Know the requirements - understand what each certification covers

Ice safety is critical - health inspectors test ice and violations can shut us down.

Ice Handling Protocol

NEVER fill ice without a scoop

Always use the designated ice scoop - never use hands, cups, or glassware

NEVER use hands or cups to fill ice

This is a serious sanitation violation that can result in health department citations

NEVER leave the scoop in the ice

Store scoop in designated holder outside the ice bin to prevent contamination

⚠️ Health Inspector Warning

Health inspectors test ice in the machines. Your dirty hands will show up on tests and result in serious violations that can shut down the venue.

General Food Safety

Hand Washing Requirements

  • Wash hands for 20 seconds with soap and hot water
  • Before handling food, ice, or clean dishes
  • After using restroom, touching face, or handling trash
  • After touching any non-food surfaces
  • Use hand sanitizer only as supplement, not replacement

Food Storage Rules

  • Employee meals: Mini-fridges in cast area or "No Man's" area ONLY
  • NO employee food in bar fridges or kitchen fridges - it will be thrown out
  • Label all employee food with name and date
  • Follow FIFO (First In, First Out) for all food items

Access Control & Security

18+ Venue Requirements

  • Check ID at door - verify age for ALL guests
  • Re-card if doubtful - when in doubt, check ID again
  • No exceptions - underage guests must be removed immediately
  • Acceptable IDs: Driver's license, passport, state ID, military ID

Bar Area Restrictions

  • Bar area restricted to bartenders only
  • • Servers coordinate with bartenders for drink orders
  • No guest access behind the bar under any circumstances
  • • Staff must be authorized to enter bar area

Critical Safety Rules

Never block exits or paths

Don't block exits with props, set pieces, bar carts, furniture, or any other items

Never move the bars

Pin spots are precisely aligned for lighting effects - moving bars disrupts show lighting

Keep main doors shut before doors time

Prevents early entry and maintains show schedule integrity

Equipment Safety

Proper Equipment Use

Carts & Dollies

  • For transportation only - NOT storage
  • • Don't store items on dollies or carts
  • • Return to designated areas after use
  • • Check wheels and stability before use

Glass Handling

  • Never pick up broken glass with hands
  • • Use broom and dustpan for large pieces
  • • Use bread slice for small fragments
  • • Clear area of guests immediately

End of Shift Equipment Return

Required Equipment Returns

  • Radios: Return to charger - don't leave dead batteries
  • Toast Handles: Return to charger in correct numbered slot (this is important)
  • Keys: Return to manager or secure designated location
  • Cleaning supplies: Return to proper storage areas

  • Dispose of personal items properly

  • Store personal belongings securely

Surveillance & Security

Comprehensive surveillance system protects staff, guests, and assets.

We have cameras everywhere:
  • All bar areas and liquor storage - wherever there is alcohol
  • All entrances - main doors, service entrances, staff areas
  • Main common areas - dining room, lobbies, walkways
  • Clock-in terminal - time tracking is recorded and verifiable

All activity is recorded and monitored. Theft will result in immediate termination and prosecution.


Safety protocols exist to protect everyone. When in doubt about any safety procedure, ask management immediately. Your safety and our guests' safety are always the top priority.
